College Girl Eats: Week Five

Jenn Rice is a new family favorite of ours. Named after our neighbor Jenn who introduced us to it! I also prepared a piece of chicken breast or a hamburger patty for some added protein to the meal.

 

Jenn Rice

2 T. olive oil
2 c. basmati rice
4 c. chicken broth
1/2 c. (or more) currants/dried cranberries
4 c. arugula or spinach
4 T. olive oil
1/2 t. chili powder
2 T red wine vinegar
1 c. hickory smoked almonds, chopped

Heat 2T olive oil. Add rice and brown a little. Add broth and currants. Boil & then reduce heat and cover for 15 min. In a large bowl,toss the rice and arugula until wilted. In a small bowl, mix 4T olive oil, chili powder, and vinegar. Pour over rice and toss. Add almonds and toss.
