College Girl Eats: Week Nine



3 T soy sauce
2 T honey
1 T vegetable oil
2 T lemon juice
2 garlic cloves, minced (approx 2 T)
1-2 t Siracha
red pepper flakes, to taste
2 T cilantro (2 T fresh = 2 t dried)
1 lb skinless, boneless, chicken breast

In a small bowl, thoroughly mix all ingredients except chicken. Pour marinade over chicken breasts and turn to coat. Cover and allow to marinade for at least 1 hour. Bake at 400*F for 20-25 minutes or until juices run clear.

I chose to not add the Siracha because I’m not a huge fan of spicy foods but I did add a nice amount of red pepper flakes. Also, it’s actually supposed to be honey-lime chicken… but I forgot to buy the lime! It’s delicious served over a bed of white rice. Why do we call it a bed of rice? Or is that not a thing and I just made it up?
