After Fall Break my mom sent back a MASSIVE pan of Lasagna and garlic butter to spread on a loaf of french bread. I asked for her recipe but she usually just makes it up as she goes along. So, for you all, she has tried to write down her delicious lasagna recipe! (Thanks, Mom!)

Mama Miller Lasagna

  • 12 lasagna noodles
  • 1 lb hamburger
  • 1 lb sausage
  • 2 or 3 pt of your favorite tomato sauce (depending on how soupy you want it)
  • 4 cup size pkg mozzerella cheese
  • parmesan cheese
  • riccota cheese
  • yellow squash
  • zucchini
  • bell pepper
  • onion
  • other favorite veggies

Cook noodles to al dente. Fry meat and add sauce and lots of your favorite italian seasonings. Taste to make sure its flavor is to your liking. Chop veggies into small bite size pieces and stir fry to a tender crisp, adding more seasonings.(You want about 4-5 cups of veggies). Mix ricotta cheese with enough parmesan cheese to make a dry sort of crumbly yet spreadable consistency — add seasoning to this too.  Layer meat/sauce, noodles, cheeses. The layer of veggies is placed in about the middle. End with a layer of meat/sauce and topping with mozzarella and parmesan.  Bake at 350 for about 30 –45 min till bubbly and melty.

Cheesy Garlic Spread

  • 1 stick butter-softened
  • 1/3 cup parmesan cheese
  • 1/2 tsp garlic salt
  • 1/4 tsp pepper
  • 1 Tbsp parsley
  • 1 tsp oregano

Mix together and spread on sliced bread. Broil for a few min till lightly browned. Watch it closely so it won’t burn.
